Nothing says summer quite like a chicken fajita, but unfortunately they can be a real pain to make. This recipe only has one slightly difficult part but even that is conquerable. So with that let's get started.
Ingredients-
One rotisserie chicken
2 1/2 tablespoons of fajita seasoning
Two different colors of bell peppers
One medium size onion
Vegetable oil
Tools for success-
Cutting board
Knife
Frying pan
Tablespoon measuring
Container for the chicken
Steps for success-
So this is the most difficult part of the whole process de-boning your chicken. But unfortunately I do not have any great advice on how to do it except that you should just start grabbing the meat and tearing it off with your hands.
Once done deboning your chicken place the bones somewhere where the chicken will not get mixed up with them.
Then taking your knife cube the chicken into bite size pieces. And think small bites.
Now you are going to need to cut your peppers. If you like more peppers in your fajita you need to cut all of both peppers. If you do not like a lot of peppers I would suggest doing half of each color.
When cutting peppers it is easiest to cut the pepper in half, then taking your fingers place them underneath and around the seed deposit then pull the entire seed part out. Then cut it in half again and cut into small bits or tiny strips.
Place the peppers in your frying pan.
Now you need to cut your onion. The easiest way to do this is to cut it in half then using your knife make a checkered pattern across the top.
Then start cutting your onion so it will be in small pieces.
Place your onion bits in the frying pan.
Then drizzle with some oil.
Turn the burner on to saute your vegetables. Stirring around until they lose their vibrant color and change to a more faded color.
Once they have faded and you can take your turner and push a pepper piece in half, place your chicken in the pan.
Then add your fajita mix in. You may want to add this to taste since some like things hotter and others don't.
Once the meat is warm, you can eat your fajita!
Serve with all the regular taco fixings. And if your meat is too hot, get some milk to drink. It will help faster than water.
