Hey there! Welcome back to Wyoming Cooking 101!
So, today I will be showing you how to make monster cookies. These cookies are really tasty and totally teenager approved. The recipe makes a large batch and is pretty easy to make.
1. The first step no matter what you are making is to read the instructions just to give yourself an overview.
2. Then gather all the necessary ingredients. And I do mean ALL. You will only make things harder for yourself if you are running around the kitchen trying to find the last ingredient before baking. DO NOT PUT THE INGREDIENTS IN THE MEASURING CUPS YET.
Ingredients-
6 eggs
2 cups brown sugar
2 cups white sugar
1/2 tablespoon (1 and 1/2 teaspoon) vanilla
1 and 1/2 teaspoon (1/2 tablespoon) corn syrup
4 teaspoons of baking soda
1/2 lb. butter (2 sticks) softened.
3 cups peanut butter
9 cups oatmeal
1/2 lb. chocolate chips
1/2 lb. M&M's
Tools for success-
Mixer
LARGE mixing bowl
Rubber or silicone spatula
Measuring cups
Cookie or baking sheets.
Cookie scoop
Turner
Hot Pads or oven mitts
Cooling racks or hard clean surface
3. Now wash your hands with warm water and soap.
4. If your butter is not soft put it in a microwavable bowl and microwave for 10 seconds. If still not soft put it in for another 10 seconds. It should be soft by now, but if it isn't put it in for another 10 seconds. Keep repeating until it is soft.
5. Put your softened butter into a LARGE mixing bowl.
6. Add your 2 cups of white sugar.
7. Next, we will add the 2 cups of brown sugar. To add the brown sugar, you will take a regular eating spoon and spoon the brown sugar into the measuring cup. Once the cup is full take the spoon and press the brown sugar down. Repeat the process until the flattened sugar reaches the top of the measuring cup. Then add your cup of brown sugar to the bowl. You will need to do this whole process 2 times.
8. Cream the sugars and butter together. I would suggest using a mixer for this recipe just because it is easier than stirring by hand.
Your creamed sugars and butter should look something like this.
9. Then add the 1/2 tablespoon of vanilla, the 1and 1/2 teaspoons of corn syrup, the 4 teaspoons of baking soda, and the 6 eggs.
10. Mix well and scrape the mixture on the sides of the bowl back into the middle of the bowl.
11. Now take a silicone or rubber spatula and measure out the peanut butter.
12. Then place the peanut butter in your bowl and mix well.
13. Add 2 cups of the oatmeal and mix it in.
14. Add another 2 cups and mix it in.
15. Keep adding small amounts of the oatmeal until you have put 9 cups in altogether.
16. Your dough is probably getting rather large if it is overflowing out of your bowl you can separate it into two bowls for easier mixing.
17. Add in your chocolate chips and mix.
18. Add in the M&M's and mix.
Congrats you have just successfully made the cookie dough! Go ahead and try some, but not too much. Now we will move on to the baking process.
Preheat the oven to 350 degrees.
Get out your cookie or baking sheets.
Using the cookie scoop, scoop a large ball of dough into the palm of your hand.
4. Roll the dough into a ball and place on the cookie sheet.
5. Repeat until the pan has 9 or 12 balls.
6. If the oven is ready, you can place the pan in the oven and set the timer for 12 minutes.
7. Do the exact same thing for the next pan.
8. USE HOT PADS OR OVEN MITTS TO REMOVE PANS FROM OVEN!!!
9. When the pan in the oven is done (normally you know if they are done or not by touching the middle of a cookie. If it still looks doughy put it back in the oven for 2 to 3 minutes.) place it on a hot pad or cooling rack and let cool for at least 5 minutes.
10. When the cookies are cool take a turner and place them on a hard clean surface.
11. Keep repeating until all the cookie dough is gone. Yes, I know it takes a while but just be patient. Good things come to those who wait.
12. Now that you are done baking the cookies, you can share with your taste-testers and enjoy.
13. Don't forget to clean everything up when you are done. So that means wash all the dishes and put them away, wipe the counters or table you were working on, and vacuum or sweep if necessary.
Thank you, taste-testers and Cori Busenitz, for sharing the recipe with me.
Until next time, Cassy.
